Tabouleh with quinoa

Completely fabulous, tabouleh quinoa salad is another classic now made gluten free and utterly delicious. It’s equally refreshing, crunchy and mouthwatering as the original version, only lighter. Just great for the summertime.

What you need:

  • 200g quinoa
  • 2 cups of finely chopped parsley
  • 4 tomatoes
  • 2 mid size red onions
  • fresh juice of 1 lemon
  • extra vergine olive oil
  • salt

How to make it:

Rinse the quinoa thoroughly under the running water, place it in a pot and cover in about half a liter of water. Bring to boil than reduce the heat and leave to simmer until all of the water is gone, than stir it with a fork and leave it to cool completely.

Finely chop tomatoes, onions and parsley and mix in the quinoa, add some lemon juice, oil and a pinch of salt.
