Sugarfree strawberry jam

I believe there aren’t many things that can compare with sunny, fresh summer mornings filled with silence and tasting like strawberries with a hint of vanilla and lavender.

This jam is made of just fruits and spices so you can indulge in it freely. Cooking it in a low temperature preserves the small pieces of the fruit for a beautiful texture and releases the natural sweetness of the strawberries. I make a jar or two every once in a while so there’s always some fresh and fragrant deliciousness waiting for me in the morning.

What you need for 1 big or 2 small jars:

  • 2kg of fresh most beautiful strawberries you can find
  • 1 vanilla stick
  • a handful of lavender leaves
  • optional: agave syrup if you want to sweeten it up

How to make it:

Wash the strawberries, place them in a wider cooking pot and let them simmer slowly at a low heat. Add the seeds together with the leftovers of one vanilla stick and lavender leaves. Stir occasionally. This takes some time to cook until it thickens into a jam, probably some 50min to an hour. It’s done once you can see the bottom of the pot when stirred with a spoon. Leave it to cool well than fill the jars and keep refrigerated. If you want to you can add some agave syrup once the jam is cooled just don’t go over the top with it, the sweetness of the fruits gets more prominent as the jam sits in the fridge.
