Extra crunchy granola

Granola is a must have for me at all times. Ever since I first made it, I have never gone back to any of the in store options. This one here is a pretty basic, light summery and extra crunchy one that  I just love making it as it’s sweet aroma fills the whole house.

What do you need for 2 big jars:

  • 500g organic rolled oats
  • 50g organic puffed rice, or just add to taste
  • optional: 70g buckwheat, or just add to taste
  • a good pinch of sea salt
  • 3 large tbs firm coconut oil
  • 50-70ml olive oil
  • 3 tbs honey
  • 1 stick vanilla seeds

How to make it:

Mix well all of the ingredients. What’s important in preparing granola is the right portion of dry and wet ingredients. You want to have just enough oil that will evenly coat all of the grains without dripping. In the end add honey and mix well again.

Spread evenly on a tray lined by a baking sheet and bake in the oven at a low heat and with a fan on, at 130-150C for about 20 minutes or when they start to turn nice and golden.

When done leave it aside to cool well and pack in the jars.
