If you love sweet and savory combos, you’ll adore this salad! Sweet strawberries and caramelized pineapple are such a yummy pair with all the fresh greens, nuts and seeds, and one simple but delicious dressing. Slightly acidic, strawberries beautifully add to the freshness of the mixed greens and besides the gorgeous taste, they are full of vitamin C which helps absorption of iron that’s in the salad. And just to balance the strawberry, I added a few slices of sweet caramelized pineapple for that glorious juicy sweet and sour crispness of the salad.
As this is more of an idea than a recipe, I wont be listing here grams and ingredients, rather lead you through the principles and let you find on your own the best ratio of textures and flavours.
The base is any mix of fresh greens, watercress, spinach, lettuce, romaine, whatever you have at hand.
The next step is toasting a mix of seeds to add flavours to your salad. It will make such a difference and depth in taste as warmed seeds release their natural oils and aromas which then spreads through the crunchy greens. Simply preheat a pan, get your mix of seeds, you can use flax, pumpkin, sesame, sunflower. Also, add some raw almonds or walnuts. Then toast with stirring occasionally it just until they start to release the oils, you will smell when its time to remove from fire:) Then sprinkle all over the salad and seal with a quick drizzle of good pumpkin oil.
Again, to caramelize the pineapple, simply grill it on both sides until golden. Cooked this way, the pineapple looses all its acid taste and you end up with sweet, juicy, aromatic bites of gorgeousness.
So top the salad with fresh strawberries and caramelized pineapples, a touch of dressing made with 1tsp honey, 1tbsp balsamic vinegar, 1tbsp pumpkin oil, a pinch of salt and a tiny pinch of black pepper and you’re all set for one amazing lunch.
