Savory pancakes with ajvar

Savory pancakes have been on my mind for some time now, but I kept on postponing the experience all in favor of my sweet breakfasts. Until I got a jar of this gorgeous ajvar with olive oil and that my friends, was the love at the very first bite. So finally I gave the savory breakfast a go with these delicious fluffy pancakes that burst in those yummy sweet and smokey roasted red peppers aroma. Together with quinoa and flax seeds, these pancakes make one amazing protein filled breakfast.

Another major ingredient of these pancakes is quinoa flour. What a wonderful ingredient! The minute I discovered it I keep using it in baking to get that delicious moist texture. Here mixed with ajvar, it made some seriously fluffy and scrumptious pancakes. Now, you can buy the flour or you can just finely blend the quinoa, whatever’s easier for you.

I also used some fresh thyme I already had in my fridge, but I guess, some sage or rosemary would go great instead. Of course, you can use dry herbs only reduce the quantity as you don’t want just one aroma to take over the whole dish. What we’re looking for here is some fine taste blending, complimenting each other.

So in the end, what can I say except that these pancakes turned out to be a fantastic surprise and a regular choice to start my day. And all of you who know how much I’m into sweet breakfasts, you may imagine how big of a deal this is.

Ingredients you’ll need for about 10 pancakes:

  • 3 tsp of flax seed flour
  • 180g quinoa flour
  • 60g corn flour
  • 2-3 tbsp ajvar with olive oil, I used Granny’s Secret ajvar
  • 2 pinches of fresh finely chopped thyme leaves
  • about 120ml mineral or plain water
  • salt and pepper

Let’s bake the pancakes:

In a separate bowl cover the flax seeds with water, it’s about 9tsp of water for 3tsp of flax seeds. Mix and leave aside for 10 min.

In another bowl mix the flours, herbs, salt and pepper. Whisk in the flax seeds mixture, ajvar and add some water if needed to get a smooth and thick batter.

Preheat a non-stick pan and fry your pancakes for about 30sec on each side. No oil needed.

Serve with ajvar and fresh veggies.

Oh, and another way to make them is to bake them in the oven in a cast iron pan. In this case the batter should be enough for 2-3 gigantic pancakes.
