Roasted red peppers and paprika hummus

Basic hummus recipe is an amazing starting point to play with delicious flavours and textures. This time I’ve made three different colourful ones that are just great for parties or as a healthy and delicious ready to eat meal whenever you open your fridge or a lunchbox.

Let’s start with the first one made of some mouthwatering roasted red peppers for that full smokey aroma.

What you need:

  • 150g cooked chickpeas (or use the tinned ones)
  • 6 mid sized red peppers, grilled and skin pealed off
  • 4 tbsp tahini paste
  • 2 tea spoons paprika powder
  • salt, 1-2 tbsp olive oil
  • some water if needed

How to make it:

Simply blend all the ingredients. Add salt to taste and some water in case the paste becomes too thick. Serve with a splash of olive oil on top, or pack it in a sealed glass jar with a bit of olive oil added to keep it fresh and yummy.
