Or turning Mondays into lazy Sunday mornings in just 15 easy minutes
What you need:
- 150g rolled oats
- couple of spoons of poppy seeds – add to taste
- a pinch of baking powder
- a pinch of sea salt
- 1 big ripen banana
- fresh juice and zest of 1 blood orange
How to make it:
Blend oats into flour, add the rest of the ingredients and blend well until the batter is thick and smoothy.
Fry on medium heat no oil. A tip to make these fluffy – once you pour the batter into a pan wait for a few seconds for the shape to start forming than pour some more on top. When done top with a sweetener of choice and fruits. They are great with almond or peanut butter too.
Play with this recipe! The base is the oat flour, backing powder and banana. You can add ground flax seed, almond or rice milk instead of orange juice, replace poppy seed with apple or pumpkin pure or just add cocoa to the basic batter.
