Pineapple, coconut & mint smoothie

Sometimes inspiration does come from the most unusual places such as this rainy spring transporting me to tropical monsoons and lush rain forests, spotting a perfect yellow & green combination of colours than realizing I still have some coconut meat leftovers in the fridge without a clear idea what to do with it. Yeah, a lot of it going on inside my head sometimes, anyway the end result turned out to be phenomenally delicious. And my garden grew dramatically since this picture has been taken 🙂

What do you need for 2 glasses:

  • a quarter of a pineapple cut in pieces
  • 1 banana
  • 2 big spoons of coconut cream
  • 70-100g fresh coconut meat
  • some fresh mint
  • fresh juice of 1 lime
  • about 200ml rice milk

Feel free to change the quantities to your taste.

How to make it:

Put all the ingredients except for rice milk into a blender and pulse until chopped up than continue blending adding the enough rice milk to achieve nice creamy and runny texture. Serve in the most beautiful glass you find, relax, close your eyes and imagine yourself in a tropical paradise of your own while sipping this gorgeousness 🙂
