Healthy berry and oats crumble

Berries and oats in any shape and form are one of those heavenly delights that make me love, love, love mornings. For this particular combination of flavours I happily turn on the oven even during the summer heat. And once you taste this melt in your mouth, sweet, crunchy gorgeousness I’m sure you will do to. This berry and oats crumble is one upgraded way to eat your oatmeal, it’s nutritious, refined sugar free, healthy and most importantly so delicious.

Ok, so you need to turn on the oven to 150C and these will bake some 20 minutes. Let’s see what else you need:

  • 250g rolled oats, organic preferably
  • 100g raw almonds and cashews mix
  • 4tbs sesame seeds
  • 2tbs firm coconut oil
  • 2tbs raw honey, I use acacia one
  • 1 tea spoon of vanilla extract
  • a pinch of salt
  • 400g berries: blackberry, blueberry, raspberry
  • 2tbs coconut sugar

Now, let’s go make it:

Sprinkle coconut sugar onto the berries and gently mix to coat them, than place them evenly in a baking dish.

In another bowl, mix oats, nuts and seeds, add a pinch of salt and than add oil, honey and vanilla extract and mix to evenly coat the oats mixture just as you would when making a granola.

Spread the oats mix on top of the berries into a thick and even layer and bake until golden, fragrant and beautiful.

This makes one delicious and nutrition packed breakfast. Oats, nuts and seeds are all great sources of plant proteins and if you want to increase its intake, serve the crumble with some soy yogurt.

Also bursting with vitamins, minerals, fiber, oats must be one of the most nutrient dense food there is. They have anti-inflammatory benefits, help reduce high blood pressure, cholesterol and blood sugar. Gluten free oats are great for a digestive system as their powerful fibers promote healthy gut bacteria. High in nutrition oats are low in calories and make a great choice in case you want to loose weight.
