Huh, what can I tell you, I love pancakes and I eat them a lot. And often, like at least once a week. And I adore my lazy Sunday breakfast mornings, that often miraculously can take over majority of my day. So here they are my friends, fit for any lazy Sunday breakfast – no flour, no eggs, no milk, just 100% delicious and hearty vegan pancakes.
I made these away from my kitchen and without my blender. So I had to get creative with what ingredients I had, some oat bran, crushed flax seeds, two pretty black skinned bananas and some almond milk. What I got were some yummy pancakes, a bit more textured compared to the ones I usually make with fine oat or buckwheat flour, which I really, really loved as they turned out to be hearty and delicious. These would also require a bit longer to fry then the ones made with flour, still not that long that would put me off from having one amazing Sunday pancake breakfast. So let’s go make some pancakes!
Ingredients for about 12 pancakes
- 180 – 200g oat bran
- 4tbsp crushed flax seeds
- 2 ripe bananas, smaller ones
- about 300ml almond milk
- a pinch of salt & coconut sugar is optional
Take a bowl and a fork and make a banana mash. Whisk in about 100ml of almond milk to make it runny and smooth. Mix the bran and the flax seeds, and salt and sugar if you want to. Then start adding a bran & flax seeds mixture, one spoon at a time followed by the almond milk until you get a thick batter.
Preheat a pan then reduce the heat to medium and fry the pancakes for about 45sec on each side. No oil needed. Serve with loads of berries and delicious pine or maple syrup. And love your Sundays!
