And not just any, but one creamy, dreamy, vegan and super yummy wild blueberry nice cream.Ok, as I’ve written in my IG post earlier this week, the Summer hasn’t been itself so far, at least in my part of the world. All gloomy, rainy and cold, it feels more of an Autumn than Summertime, but hey, that’s why this is a vegan blog: to inspire you to give some love to the Earth and all it’s living beings by choosing to eat this gloriously delicious vegan food. The food that is eco-friendly and cruelty free. Healthy and yummy, quick and easy to make, all at once!
So ditch all the industrial ice creams, even those that say no-low-sugar-calories-vegan. Whatever. Switch to a beautiful homemade nice creams. Like this one. Made of deliciously fresh wild blueberries that transport you into a lush green forests, brisk air, clear mountain streams and happiness.
Let’s go make some nice cream!
For 2 bowls of blueberry nice cream you’ll need about 7 – 10min and the following ingredients:
- 300g frozen wild blueberries
- 2 small frozen bananas
- 100ml coconut cream
Very simply blend all the ingredients and voila! Your blueberry nice cream is ready to be served! If you want it more of an ice cream consistency, just freeze it for 15 to 20 minutes. That is if you can wait, I couldn’t 🙂
And if you love berries like I do, check out this raspberry nice cream too.
Wish you all a beautiful and berrylicious Summer!
