Another classic, now made gluten free and equally refreshing and delicious as the original version.
What you need:
- 200g quinoa
- 2 cups of finely chopped parsley
- 4 tomatoes
- 2 mid size red onions
- fresh juice of 1 lemon
- extra vergine olive oil
How to make it:
Rinse the quinoa thoroughly under the running water, place it in a pot and cover in about half a liter of water. Bring to boil than reduce the heat and leave to simmer until all of the water is gone, than stir it with a fork and leave it to cool completely.
Finely chop tomatoes, onions and parsley and mix in the quinoa, add some lemon juice, oil and a pinch of salt.
