Rustic tomato soup with quinoa and basil

I love a good tomato soup. Warm and hearty, with lots of texture so that you can really taste tomatoes, herbs and grains I like to add to it. This rustic one is cooked with quinoa, and it’s also delicious with millet or rice. And for a bit more warmth during colder days you can add buckwheat as well.

It’s so simple to make and it cooks fairly quickly. All it takes are some juicy, ripe local tomatoes, a few basic ingredients and in about some 40 minutes you can enjoy this delicious soup.

What you need for about 4 to 6 servings:

  • 1 kg of fresh juicy tomatoes
  • 500ml of tomato juice
  • a handful of fresh basil leaves
  • 100g of quinoa or other grains
  • salt
  • olive oil
  • balsamic vinegar

How to make it:

Wash the tomatoes and basil. Cut the tomatoes into small cubes. Cloth dry and finely chop the basil leaves. Thoroughly rinse the quinoa under cold running water and set aside.

Preheat the olive oil in a larger pot then add basil and stir fry it just for some 10 to 15 seconds. Make sure the leaves are well dried before they hit the oil in order to avoid any burning and heavy reaction of oil and water. You can also add basil later during the process. What I like about first frying the herbs is that they release all the flavours into the oil for a stronger aroma of the dish and add to the texture of it as well.

The next step is adding the chopped tomatoes, stir and leave them to cook in the mid to lower heat for the next 20 minutes until they get all soft and almost dissolved into a thick paste. This is the moment to add the tomato juice and quinoa, bring to boil and cook until the quinoa is done. Add some salt and a dash of balsamic vinegar and the soup is done.

Tomato is one of those produce that you would rather want it cooked than raw, and it is due to lycopene a mighty antioxidant. As the raw tomato contains more than 90% of water, it evaporates during cooking leaving the soup or paste with a very high concentration of lycopene, a substance that has huge health benefits. Besides the lycopene, tomato is an excellent source of vitamine E, fiber, potassium and folate, manganese, raw tomato contains a lot of vitamine C and many more good stuff. So befriend tomato if you haven’t already, eat it raw, cooked, baked, juiced, whatever you like, it will help your skin glow, regulate digestion, strengthen your bones, your heart and the whole vascular system and with it powerful antioxidants it can help your cells stay healthy and happy.
