Mint & peas spread

I don’t dare call this a recipe. More of an idea, and a mouthwatering one. Fresh aromas of the mint go so beautifully together with delicate flavours of the baby peas that you will fall in love with this green spread instantly.

What do you need:

  • 200g of baby peas
  • a hand full of mint
  • salt
  • 2 tbs olive oil
  • 80ml rice milk or vegetable cream

How to make it:

Cook the peas and than blend with mint and oil into a paste. Add salt and keep adding cream or milk while continuing to blend until the paste is thick and creamy. It will stay fresh in the fridge for up to five days.
